Simple Roasted Beets with Goat Cheese

This is a delicious and satisfying way to make beets. Even those who don’t enjoy them will love this recipe. We originally got the idea from my brother in law PJ who is an incredible chef. My wife Amy figured out the perfect cut which accentuates the tender and crisp texture of the beets. Add herbs like Thyme or Rosemary if you’d like. Bon Appébeet!


3-4 Medium Golden or Red Beets

~3-4 oz of Goat Cheese (Doesn’t have to be exact)

Olive Oil


Herbs (Optional)


  1. PreHeat Oven to 375

  2. Thinly cut beets as shown above

  3. Place beet slices onto baking sheet and toss with Olive Oil and a pinch of salt. Parchment paper is optional. Make sure beets are EVENLY coated with Olive Oil.

  4. Bake for 35 minutes until edges crisp and middles are tender

  5. Remove from oven, crumble goat cheese on top, mix together, and enjoy!
